UCAS choices

Can I apply to 2 universities now. Then choose my other 3 options later (around December).

NB. I won’t be changing anything other than adding the other uni options later as I am not sure what other unis to choose.

Yes, you can add choices later. Just be sure to add them before the January deadline.

Many schools don't realise that you can do this - they might need a bit of convincing - but yes, you can do this, and it makes sense if you still have Open Days etc to attend or want to see how these initial choices go, and possibly make your final choices based on any offers/rejections.
