Many Unis do not actually publish this detail - I wish they did.
You can try phone/emailing each Admissions team, but you can expect that many/most will not actually tell you the real detail.

As previously mentioned, not all unis put this info specifically on their webpage. However, I can see from UoS's webpage for Economics, they ask for AAB at A-Level including maths. They then say they require a minimum of English Language 4/C at GSCE but they do not specify any other GCSE requirements. This suggests that they are moreso looking at your A-Level grades.
However I have found in my own experience, the university can be more lenient if you firm them as your top choice. Both my partner (ChemEng_ and I (EngLit) got slightly lower than required A-Level grades, but as we firmed Sheff we were still offered a place on our respective courses!

I’d recommend checking university websites and contacting their admissions teams directly. Most entry requirements place more importance on A-levels, but GCSEs still need to be met, so the official course pages will give you the most accurate information.
