Cooking your dinner every night after being in lectures with more stuff still to work on most evenings is the last thing you want to do. Here are some batch cooking meals to make on the weekend to set you up for the week and keep you warm this winter.
Chilli Con Carne A tried-and-true classic, this meal can be prepared in mass and frozen for as long as you like. Make a big portion of the chili and a separate one of the rice and then serve them up as a meal in about 5 different Tupperware’s. You don’t have to eat one every single night if you get bored, but at least you know you’ve got some hot home cooked dinners ready to eat whenever you like. Personally, I put a bit of chorizo and chipotle for some extra flavor, but it’s not needed. Here’s as link to my favorite recipe if you’re willing to try:

It’s such a good meal full of veggies and very filling; it’ll warm you up after a cold and wet day in winter and just feels like a meal you’d have with your family growing up. I made this a lot in my first year as I missed my mum's cooking a lot. Here’s the recipe we use to give you some inspiration:

It’s good to make these kinds of meals on a Sunday, eat your portion and then divide up the rest and freeze it for the week. Since it's getting cold, I like to add a bit of space with cayenne pepper or chili flakes just to heat me up that little bit extra but that’s your personal choice. I’ve attached an easy-to-follow recipe that doesn’t require too many ingredients:
