Would you be frustrated if you completed Biomed and then failed to get an offer for GEM? Because that’s the risk really.

If you really wanted to be a Doctor, you wouldn't care where the course was, because it would not actually matter. I think you may have answered your own question here - you are not 100% committed to Med, so go to Cardiff or wherever and do something else. And btw, GEM is bonkers-competitive - even worse than the 5-year course.

In that case all I can say is that it’s a very risky route just for a potentially happier campus experience.

Ordinarily I would discourage GEM if you have any choice as it’s more expensive, longer and more competitive. If money is not a concern and you’ve factored in that it’s going to take you X more years to be qualified, then the only thing left is how much more competitive GEM is than undergrad med.
