Could offers come in straight after applying?

I think all thats left is for my college to actually submit my reference which has been done but just needs uploaded, is that when I’ll receive the acknowledgment????

You need your application to be submitted to UCAS before you get acknowledgements but they're usually quick after it's been submitted. In my case my application was submitted at 14:35 yesterday and got my first acknowledgement at 4:45 today.

What exactly is an acknowledgment?

Basically an email from the uni saying thank you for your application and we're now considering your application. Also can contain other things about the uni, one of my unis gave me access to an applicant portal while another invited me to an applicant day.
