Why is he acting like this

Hooked up with a man out of state 6 months ago that I was previously talking to off and on while on vacation. The night was very intense almost like love making. Offered to pay for my stay and reinsurance me for my time off of work if I stayed a extra day… yet I left cause the trip wasn’t for him and I had to get back to work.

Make a long story short nothing came out of it yet we still talked off and on despite me living out of state. He’s very inconsistent yet possessive? I went out of state for my birthday and he was asking what man paid for my room, if I was with a ball player or rapper? He also went to my page every day despite us not following each other and watched and hearted my stories?

Fast forward a couple weeks later he was ignoring me and my texts yet texted me the night two hours before his birthday? I never responded a month and a half past go by of off not talking, I follow him he followed me right back then called me. Asked me why I never wished him a happy birthday months ago? I had to get off the phone and he demanded that I told him where I was going and who I was going to be with…?

Told him I was going to make food, he then told me to send a picture of the food afterwards to him just to make sure that was what I was doing? He’s inconsistent and said he doesn’t want anything with me, so why is he behaving like this ?

I can't say exactly why he's acting like this, but why are you still talking to him? Sure, you had some really good sex, but you'll need a lot more than that for a relationship to work. He's not giving you the attention that you want, and there are red flags all over this. Him asking who is paying for your room, where you're going and who you're going to be with, and proving that you're eating food are all, as you say, extremely possessive, but I think they go beyond that and I'd be genuinely concerned as to how that would develop if you were to actually take things further with him. Personally, I'd be cutting contact and moving on.
