Congratulations on your offers! Whether you choose Law or Economics here of course depends on which you can see yourself enjoying more, but also which would prove more beneficial for your future career. If you applied to law because you genuinely find the subject matter interesting and would like to explore the academic/theoretical side of it more, then I would recommend pursuing the LLB. However, if you simply applied because you are considering a legal career in the future, and instead would be happy to take a one-year postgraduate conversion course, I would choose Economics.
As someone who did a non-law undergraduate degree currently studying the PGDL, I would highly recommend this option (provided you would enjoy Economics - which I assume you do if you applied for it!). In fact, a non-law degree can often set you apart from law students when it comes to future job applications in the legal sector - many firms value the transferable skills you bring and how your different experience shapes a unique outlook on certain topics.
