I did a Mandarin program in Shanghai a couple years ago (not 100% sure if it was the exact same provider, but sounds similar). The language gains were real, mostly because you’re forced to use Mandarin outside class just to function. Housing was basic but fine, and the staff helped a lot when I had visa and phone setup issues. It’s definitely not a vacation classes can be intense but the cultural outings balanced it out. If you actually put in effort, your speaking improves fast.

I teach Chinese at a high school, and a few of my former students have done immersion programs in China. The biggest difference seems to come from how much you choose to engage locally versus sticking with other foreigners. Structured programs are great for support, but progress skyrockets when you’re ordering food, chatting with shop owners, and getting lost a little. One student said her tones improved more in two months abroad than in two years of classroom study. Just go in with realistic expectations it’s rewarding but mentally tiring.

I looked into those programs but ended up organizing my own stay because of cost. Not saying the programs aren’t good, but you definitely pay for the convenience and hand-holding. If you’re nervous about navigating China solo, that support might be worth every penny. Personally, I found language exchange meetups and a local tutor way cheaper, though it took more effort to set up. Depends if you value structure or flexibility more.
