BSc PPE is a subject that LSE do want to see a mix of subjects in (see here). That being said, Economics qualifies as an essay-based subject, so you are all good there. They do not care if it's "STEM-heavy" if you have fulfilled what they're looking for.
LSE also does not care what you get in an award. They value what you take away from it instead. No use winning the JLE comp or getting published in the Concord if you don't apply your learnings into other academic pursuits.
