Manchester metropolitan

I applied for both UOM and MMU to study Economics with 3A predicted grades in business economics and psychology. UOM has rejected me and now I'm left with MMU, I do have some other unis outside of Manchester but id prefer to stay home due to personal reasons. the economics course at MMU is all coursework and just seems a bit too easy (i compared the modules to university of Liverpool). Is it really a big deal if i get a degree from here and not a Russel group university and if i do end up at MMU what can I do so that I'm par on par with Russel group applicants when looking for graduate jobs in terms of extra curricular things.
