Pizza Fiorentina watch

    When cooking a pizza fiorentina, an egg is cracked on the pizza base. When I tried this, I put the egg on the base before heating. I then used the oven fan to cook the pizza but the egg came out raw. I read a recipe that said to use a grill instead. Does this mean that the grill cooks the egg, or does the base need to be hot before putting the egg on?

    I've never tried pizza fiorentina, but I'm surprised the egg came out raw.

    When I make pizza, I cook it for about 30-40 minutes, at about 190 degrees. An egg ought to be cooked in that amount of time, really.
