Is it wise to apply to a huge different variety of courses
i.e. i was thinking of doing this

    UCL - economics
    LSE - maths economics
    Warwick - MMORSE
    Kings - maths
    somewhere else - something else

    and has anyone done this?

It would be quite hard to write a personal statement for those different courses, no?

Are you not sure what to apply for yet? You still have months to decide!

i'm not entirely sure yet but i would consider applying for all those, as long as it is not going to be a problem for me

Mine shook up the choices a bit:

    Oxford - History and Economics
    Edinburgh - Economics
    Edinburgh - History and Politics
    Aberdeen - Economics and History
LSE - Economics and Economic History

Worked out okay apart from Edinburgh Economics where they didn't think I wrote enough about straight Economics in my Personal Statement and so rejected me first time. Once I phoned them up and explained the situation they were happy to give me an offer though.

so universities really don't see what other universities you've applied to?

Not unless you mention one in your personal statement. I mentioned Oxford but I probably shouldn't have in retrospect.
