Hi, I wanted to write a thank you card to my French teacher, is this okay?

Imagine the grave accents if you will! :smile:

Also, in real life I often say tu, but should I write vous 'cause it's in a card?

je trouvais sounds like its an action which has happened a long time ago

any action in the past that has a set time frame is perfect not imperfect. so when you said 'this year' that makes it perfect.

I think the perfect is better here because the classes are finished. OP wants to convey that she has found (all the classes in) the year interesting, the perfect works better as it implies competeness.

Well I disagree. Maybe it's just a question of style rather than being right or wrong. I would certainly use 'je trouvais' here. 'J'ai trouvé' to me sounds like a one-off event.

Just because something happened for a long period of time does not mean that it isn't a completed action. The perfect isn't reserved to one off, short actions.
