I listen to all types of Latin music, but Marc Anthony is definitely an artist I love, the king of salsa, and for me, one of the best voices in music full stop.

I also look up to Ricky Martin for a lot of reasons, and listen to both his Spanish and English music.

Since you mentioned Gackt, I assume you've already heard of Malice Mizer. If not, check 'em out!

Kim Hiorthøy - a Norwegian electronica artist. Nice soft beats and ambient tone.
Porn Sword Tobacco/Stress Assassin - Two alter-egos of the same guy. Swedish, I believe. PST is more ambient and atmospheric while Stress Assassin is heavier on the "dub reggae".
Frisk Frugt - Danish experimental electronic folk artist. Quite avant-garde in places. That guitar reminds me of Fat Old Sun by Pink Floyd.
Michał Jelonek - Polish violinist and front man for instrumental metal band Jelonek. His violin replaces vocals. Which is good because metal with growling is terrible, and power drumming.
Leech - Swiss prog/post-rock band. Atmospheric stuff.
Lemongrass - German Deep House, Downtempo, Drum N Bass, ambient artist
Múm - Icelandic glitch electronica and ambient (their first album is the best one)
Extremoduro - Spanish supergroup featuring a badass sax. Modern Spanish prog rock, alive and well.
Mägo de Oz - (Wizard of Oz) Spanish folk rock group, quite prolific. Their album Finisterra (end of the world) is the Spanish version of Rush's 2112, storywise. Amazing concept album.
Soil and Pimp Sessions - Japanese Death Jazz. How can one not link this?
    That'll do for now.
