For the GCSE exams I took last year, do I need to put June 2008 or August 2008 as the date (or does it not matter)?

You may have had exams in late May or Early July, so in that case June would be wrong. Therefore, August is better but it doesn't matter too much.

Don't think it matters. I put whatever date is has on the certificates, which varied from the month the exams were taken (AQA) and date certificates were issued (CCEA).

Cheers, I'll just put August, as they all say Summer (except one saying June, which is funny because I took the final exam in late May...)
