I'm booking the thing online but I've got one problem. Can I just leave the return journey service blank or am I meant to select something.
It'd be pretty stupid if I suddenly turned up to find that I got no return service because I didn't book, despite having an all day ticket.

I think you have to go for the more expensive 'open return' (where you can return at anytime within like a week or so) or you just have to pick a time and try to make that exact time.
I'm assuming you mean National Express coaches by the way, not trains. On trains you can get a 'day return' (cheaper than an open return) and return anytime that day.
Coaches you can turn up earlier/later than what your ticket says for a journey, but there might not be spare seats.
I think the best thing to do would be to check the prices of each before buying anyway, but if you think you know whenabouts you might be making the return journey, just buy a normal return.
