• 12 oz flour

• 8 oz soft brown sugar

• 2 packets of vanilla sugar (not essential but makes it taste better, vanilla essence can also be used)

• 12 oz self raising flour

• 2 large/medium eggs

• Chocolate chips (can use which ever you like) (quantity doesn’t matter but put quite a lot in)

N.B. 1 Ounce (oz) is a large tablespoon


• Line some flat trays with baking paper (you will need about 3 flat trays)

• Preheat the oven to 200°C

• Cream the butter and soft brown and vanilla sugar

• Beat the eggs in a cup (smell to check that they are okay to eat) and gradually add to the creamed mixture

• Beat the mixture gently

• Add the flour, bicarbonate of soda and chocolate chips

• Make sure the chocolate chips are coated in flour then mix the whole thing

• Take a large teaspoon sized amount of mix and flatten it into a disc shape about and place it on the tray

• Be careful not to put the shapes too close together as they will spread and stick together

• Cook for about 10 – 15 minutes (or until golden brown - they will come out very soft, and harden upon cooling)

• Leave on tray until cool then can be placed on a wire tray, and when completely cool in a box for storage.


My recipe is for chocolate chip cookies, but you can add cocoa to make them more chocolatey or substitute the chocolate chips for nuts, fruit, smarties etc. You can be quite creative!
