Ricotta and Spinach Tortellini
- A choice of sauce:
- Sage butter (sage, butter)
- Carbonara (cream, bacon, mushrooms)
- Tomato (garlic, tomatoes, tomato puree, veggie stock, seasoning, basil)
Can buy it- but it's dead easy to make- make (or buy) the pasta- Jamie Oliver has good recipes, you'll need a pasta machine.
Stuff pasta with blanched-and-squeezed-until-dry spinach and ricotta (MUST be very fresh as it's so immature it goes off V. quickly)
Cook for 2-3 minutes in gently bubbling water.
Can serve alone, with sage butter (fry sage in butter- voila), with carbonara sauce or with tomato sauce (zizz ingedients until smooth).
