• Recipe - Stone Soup

This soup is very nutritious and quick to do. You can store in the freeze and eat it whenever you like. If you don't want to have the trouble of cutting the vegetables, there are lots of ready cut vegetables at Asda and Tesco you can use. The story goes that a beggar was knocking on doors with a stone inside a pan asking for some water to make stone soup. People would feel sorry and give him this and that to mix with the stone. He ends up with a massive soup.

Ingredients:

Oil or butter Olive oil 1 onion (cut in small pieces) 1 garlic clove (cut in small pieces) 1/2 cabbage (cut in small pieces) 2 carrots (cut in small pieces) 3 potatoes (cut in small pieces) 1/2 can of lentils 1/2 can beans 1 chorizo/ bacon/ pieces of meat 1 egg salt and pepper parsley


Method:

1. heat the oil or melt butter in a large pan in high heat 2. add the garlic and onion and stir until they are cooked 3. add the meat/ chorizo until is slightly cooked (2mins) 4. add everything else inside, including salt, pepper and parsley and stir fry for 5 mins so that the ingredients take the flavors in 5. add enough water to cover the whole thing and let it boil for 5 mins in high heat 6. lower the heat to medium, cover and let it cook for another 20 mins or until the carrots are cooked (you can leave it there while go for a walk, take a shower, etc). 7. serve
