Enzyme tertiary structure differences

What are the differences in tertiary structures between thermophilic hydrolase enzymes and mammalian protease that curdles milk?

The only thing I can think of is that the mammalian protease has many beta pleats to increase surface area, and the hydrolase will not need this as it acts on single entities. Are there any more differences?
