The hydrophobic fatty acid tails on phospholipids? They align themselves inwards so that they form a phospholipid bilayer. It forms a barrier to polar/non-lipid soluble molecules so as to control what goes in and out of the cell. Hopefully that's right anyway :s-smilie:

Yep, it's the reason why the membrane sticks together and doesn't just dissolve.
