To 'go for a coffee' doesn't necessarily mean that you're going to drink coffee!!! It's just a figure of speech. And to be honest, I doubt anyone's going to get offended if you don't. Just ask her for a coffee and then say you feel like a cold drink or something when you're there. Really, it's such a small concern, not even worth thinking about, and certainly not worth putting your potential relationship at stake for.
