Slate is mainly composed of quartz and muscovite or illite, often along with biotite, chlorite, hematite, and pyrite along with, less frequently, apatite, graphite, kaolin, magnetite, tourmaline, or zircon.

So if you do chemistry, this is a mixture of chemicals, and so there is no formula.

I would have thought instead of dissolving in water and turning the water acidic, that it will dissolve in acidic water, say pH 3.

Surely though slate is derived from clay or mud and as such would be 99% kaolin. The other minerals you have mentioned i'm guessing would make up a small percentage of the slate.

Kaolin has a chemical formula, can't remember it off the top of my head (which is a good thing!). I'm sure you'll be able to find it on google.
