Does royal holloway do interviews for undergraduate applicants? I saw on here somebody saying (9yrs ago…) there is an application process and I’ve tried googling the answer but it says things like ‘may be invited…’

I would say that apart from Law there are very few subjects that would merit an interview at RH. In fact, the majority of universities do not carry out formal interviews except for a few subjects. Some universities may invite you to an informal chat but these are not usually compulsory - however, some universities will not give you an offer until you either accept or decline the invitation.
