Sometimes tutors recognise stuff that has been lifted without acknowledgement from articles etc. Sometimes the "voice" changes so dramataically it sets alarm bells ringing.
I've recognised stuff from when I've read it before. Then a quick google search will usually avail me of the answer. Otherwise, Cheadle and Martin are, as usual, quite correct.
Recognising plagiarism can vary from the type of language being used changing resulting in a different “voice”, to a lecturer recognising information from a paper they’ve personally read before, either at the original source or through another’s work.

I believe they can just simply copy and paste your work into google and if it exists anywhere else on the internet then it will come up in the search results. Otherwise they will just use TurnItIn as their resource for plagiarism. If you've copied it from their lecture slides and the resources they've used then they'll also definitely know.
