I think you should talk to her about the fact that she is so unwilling to let you leave. Yes, it's ultimately your life, but I think going around her back to do it isn't addressing the bigger problem.
Ignorance is bliss.
Talk to her and explain to her why you have chosen the universities you have. Yes she's your mother but it is your life and ultimately she should want you to be happy.
As for her ringing up the places you are applying to, I very much doubt they would listen to her, for starters they wouldn't actually be able to tell that she was who she said she was. Even if they did, universities give places on the basis of how good the applicant is, not how their family feel about it.
