Recommended Extra Curricular for Electrical and Electronic Engineering

I am going into a gap year next year and I want to apply to EEE so I won't be able to do any extra curricular things that are only possible in sixth form. I was wondering if there are things like an internship or a project I can do on my own which I could talk about in my personal statement.If it's a project that i'll do on my own, how do I prove it to the unis im applying to that I've done them?
Get an Arduino, do some stuff with it. If you can find a gap year job in engineering then go for it.

If it will make a difference then they'll ask you about it in an interview and it will be obvious if you're talking rubbish.

any idea what jobs i can get in engineering?

so the idea is to get good at using an arduino by doing alot of projects and learning about electronics through that?

There are some specific jobs made for gap year students out there.
