I thought you had to use U in set notation but in the example below it uses n so unsure as to when you use which one?

u - union OR
n - intersection AND
It must be in your textbook?

I understand that U means union and n is intersection but I'm unsure as how to use them in set notation such as expressing values for x in set notation, I thought it should be union all the time but in the example above it is an intersection.

Its exactly the same as a venn diagram. If both condition must be satisfied, its n (intersection, AND). If either condition must be satisfied its u (union, OR). Theyre two different ways of combining two sets (venn diagram). There must be an example or two in your textbook?

Thank you, I have looked through my textbook for set notation but couldn't find anything.

top of the list. There are many others.
