yes definitely you are capable enough your gcse results are really good!! sociology is fine but an a-level subject like maths might be more useful and may make your application to university more competitive (physics alternatively would make your application more competitive), if you're applying to a top uni like imperial. but at the end of the day, you should do the subjects that you think you're going to do best at and that you genuinely like, so if sociology best fits that description, then go with that

I was thinking Of doing maths but I wanted to go for quality over quantity instead by focusing on bio and chem entirely and getting good grades for them and my 3rd option could be like economics

Have you actually looked at the GCSE requirements for Biochem on any University course pages?
Usually they will only specify GCSE Maths and English - and that is rarely above a grade 6.
Whilst Unis may look at you overall GCSE profile, they are FAR more interested in your A level subjects / grade predictions.

Bath - https://www.bath.ac.uk/courses/undergraduate-2024/biosciences/ - AAB including A in Biology and A in Chemistry, plus GCSE Maths and English both at grade 4.
Sussex - https://www.sussex.ac.uk/study/subjects/biochemistry/undergraduate - BBB including Chemistry, plus GCSE Maths and two sciences at grade 5.
Liverpool - https://www.liverpool.ac.uk/study/subjects/biological-and-biomedical-sciences/ - ABB including Biology and Chemistry, plus GCSE Maths and English both at grade 4
Etc, etc
