Due to the fact that steretypes are exactly that. They generalise fairly large segments of society.

For example, the typical steroetype of a homeless person woubld be: A drug addict living rough who spends all his money from begging on drugs.

When in fact, it could be a young person who has difficulties at home and thought living rough was preferable to his home environment, They could have been kicked out. Some homeless people have mental difficulties leaving them unable to fit into "normal" society.

Also rather then beg for money, some homeless people work. Take a look at the big issue for example.
Stereoypes are shortcuts used by people who want to make sweeping generalisations of a portion of society or by media organisations who haven't got the time or patience to develop a character.
