I was interested in optometry last year and found https://www.city.ac.uk/prospective-students/courses/foundation/introduction-to-optometry#accordion502079-header2 allows you to take a foundation course with one science in order to do an optometry degree the following year

Depends some unis consider psychology along with the common sciences (maths,biology,chemistry and physics..)
