It's ok to be a little pink in the middle but it shouldn't look raw. If you've cooked it for the time & method it says on the packet it should be alright.

it actually depends on the sausage, some can still be pink no matter how much you cook them (richmond)

After two years, I'm sure they're either fine or dead from ever so slightly pink sausage (that apparently is pink no matter how long you cook it for anyway)
A sausage with a pink tint is probably not undercooked but may be indicative of thrush.

By the way why resurrect this old thread?
