AEA's

If I took a full A level eg french on the AQA examboard whereby AQA doesn't provide the oppertunity to do AEA in french - can I do the AEA in that subject on a different examboard e.g. OCR to the one that I had done my A level in?

Yes. Each AEA is only offered by one exam board and it doesn't matter at all which exam board you took your A-level with it. I did A-level French with Edexcel and the AEA, which is offered by OCR, and it wasn't a problem at all.
