'Fermat's Last Theorem' by SImon Singh is quite interesting - I would just wonder into your local library, head for the popular science section and read anything that interests you. It's better to talk about something that you're genuinely interested in in your interview rather than something that you've specifically read in order to be interesting.

There's something about this in the maths thread, but I can't seem to find it at the moment, I'll dig it up tomorrow if I can.

Here's a few I've read this summer which I've found interesting:

The Magic of the Primes
The Art of the Infinite
The Millennium Problems
Dr Riemann's Zeros.

I've also heard that Godel, Escher, Bach is good to mention, although I haven't quite got around to reading it yet, but I will if I can find it at a library.

I enjoyed reading a book called The Wonders of Numbers, and Mathematical Scandals, hehehe. Wonders of Numbers has loads of cool facts and puzzles. They're more to read for fun than to increase your knowledge by loads :p:
