When a university has accepted me which comes first , the tracking update or mail/email from uni

It depends- especially over Christmas. In general, any physical mail will come last and an email from the uni may come before track has been updated.
However, any written offer is proof of an offer, so if track hasn't updated for a while but you believe you have an offer, you should contact UCAS and the uni to check what's going on.
