Hypothetically, if I had missed my Msci offer for, let's say Zoology by 1 grade, but I still had enough grades to do BSC Zoology, would the university be likely to change my offer to that or would it be a straight up rejection and I'd have to phone the university through clearing to apply for that course (if it was available)

Universities will usually consider applicants for alternative courses with lower requirements as a matter of course before they will reject someone who has put them as firm choice
To be honest in the vast majority of cases if you miss your offer by one grade you’ll still be accepted on your original course choice.
