UK - International relations internships, work experience or activities to boost CV?

I finished my A - Levels last September and was planning to go to uni but for medical reasons I have had to put this on hold for a year. I have paused my studies and will begin next year as a fresher studying international relations at my first choice uni. I'm now in a situation where I have had little planned for my gap year and was wondering if anyone had any suggestions on what I could do this year. My main priority is to boost my CV as the title says. I've got a part time job atm which is perfect and travelling is an option later on but not one I am so desperate to do.
I've done some research into internship opportunities within IR but since realised a lot want students currently at university studying the course within a specified year so I'm aware getting one might be harder. My strong A - level grades will allow me to take a year in industry within my course which will help but this is in a few years time obviously. From where I live finding opportunities local will be highly unlikely but I am willing to travel where necessary.
A friend of mine did work experience before she started university with BCBF. I'll try my luck with them but am not entirely sure if they specialise in IR - she told me they do politics but that is all she knows - will contact them. I know this and similar opportunities will likely happen in the summer which is fine but it would be ideal to do these throughout the year.
My other suggestion of mine would be to do online courses. With not a lot to do at home with most of my friends at uni or constantly working, I'd have the time for these but I am unsure on whether these would be worth writing on my CV and therefore beneficial to me.
I'd appreciate any feedback on my plans/suggestions and any further suggestions to give me guidance on where to look next. My goal for this year is to get one thing on my CV at the minimum. Thanks for reading.

I think it's completely fine to have a gap year before going to university, I myself did it and I thoroughly enjoyed it. I would recommend trying out new hobbies and learning a new skill. Work experience in your field is good but it is also important to develop yourself in other ways outside of your course.
I took a graphic design course in my gap year and have been able to use it as a way to earn a little money on the side and also just something to mention in my CV And interviews that sets me apart. The main point of a gap year isn't just for gaining work experience, it is to explore different options and expand your horizons.
Take your time in finding what interests you and simply enjoy it.
