If you're in year 12, you've got a lot of time to do the research. Go to some open days. When you have an idea of what grades you're likely to be getting, try inputting your grades into http://www.whatuni.com/ and see what comes up.
Check any Psychology course is accredited by BPS - http://www.bps.org.uk/bpslegacy/ac

My college has set a deadline for the 1st novemeber for our UCAS forms though, and a lot of universities open days are after that date

But you said you were in year 12. Do you mean year 13? If so, just do the whatuni thing then.

Think about the type of place you want to study - big city or somewhere smaller? Do you want to be able to visit home easily or are you happy to move a long way away? Are living costs going to be an issue? Are you interested in a placement year? Course content is going to be fairly similar for BPS accredited courses, but if you have a particular interest look for universities that are strong in that area.
