If someone accepts an offer by post (thus communication satisfied when posted) but later revokes the offer by telephone before the letter reaches the offeror, what is the outcome

I don't think you can revoke your acceptance. Once the letter is in the post there's a contract.
What poster above said is right, take a look at Adams v Lindsell for information on the postal rule.
