I eat relatively healthily however I have a cheat day on Sunday's, I'm 5'6 and weight 9 stone. I walk Atleast 2 miles every day and go to the gym 3 times a week for anything between half an hour to 3 hours depending on my school workload and how motivated I'm feeling. I'm a girl btw!

You're being contradictory, you say you want to "build muscle" yet avoid "bulking up", if you want to build muscle in the legs you could do the pistol squat or the dumbbell split jump.
Interms of stomach muscle I'd advise you to do weighted sit up or a hanging knee raise.
