Can you do MSc Data Science from a BSc Economics degree?

Nearly all of the universities require a '2:1 in a numerate subject such as Maths, Physics, Comp Sci, Engineering' but don't list Econ. Could you go from an Econ BSC to data science msc?
economics is definitely a numerate degree, and you should enquire. did you undergraduate include at least a broad coverage of econometrics or even specifically data science for economics?

have you got any extra statistics beyond elementary stats/stats for economics/intro to stats that you took in year 1?

equally, how do the data science courses you're looking at match up with people that don't have a lot of technical/data-focused academic experience?

Contact the departments of the university you want to apply to and ask. Usually the entry requirements are pretty clear but they do not cover everything as people frequently receive offers they didn't expect to.
