' I saw that Sawbones turn sick and white with the desire to kill him.'

It's a pretty short quote, but it's showing the disturbing effect that Hyde has on people - as Sawbones is the doctor, you expect him to be calm, logical and good, as someone in the medical profession needs to be, so it's showing just how dramatic and almost corrupting an effect Hyde has on people - for a doctor to be so "sick" with the urge to kill Hyde, there's a juxtaposition there between what the nature of a doctor should be and how Sawbones is around Hyde. It shows just how deeply disturbed Hyde makes people - if this is for an assignment or something you could link it to other quotes showing how people react to him. You could possibly also link "the desire to kill him" to the violence that generally surrounds Hyde, as if the pure evil that he consists of can taint those around him.

Hope this helps! I haven't studied Jekyll and Hyde for 4 years now so apologies if my analysis is a little rusty
