Hey guys can someone educate me on the ways masters and honours degrees works. What would generally be better, a masters from a university like Dundee, or honours from somewhere like St Andrews?

A masters degree is a whole level higher than an honours degree, like the difference between A levels and GCSE.

You are talking about Scottish degrees, so you have to take extra care. In England and Wales, and in fact much of the world, an Honours degree is standard, in fact so standard it is often not mentioned. You can only get an 'Ordinary' degree by failing. In Scotland it is different, because you can go up to University effectively from year 12/Lower sixth. So in Scotland, the first year of Uni is equal to the final year of school, second year equal to first year of uni elseshwere, third year equal to second year of uni elsewhere - and is you choose to graduate at this point, you get an ordinary degree. That might be useful in Scotland, but it's pretty useless elsewhere. You need to do the 4th, Honours year to get a degree that is equivalent to other degrees.

A masters degree is a higher level altogether and can be linked to the undergrad degree, but is more often a separate degree. So a Masters from Dundee is a higher degree than an Honours degree from St Andrews
