General interest books about these topics?

I was wondering if there exist books at the general interest level about:

•Exotic phases of matter, as in an overview on various uncommon states such as time crystals or Bose-Einstein condensates

•Attempts at artificially recreating biological senses for , i.e. optical sensors based on mantis shrimp or olfactory sensors based on snakes

•Programmable matter and/or metamaterials in general

•The justifications of high cost scientific experiments, especially relating to physics, i.e. the complications relating to justifying the large amount of resources required for certain experiments, i.e. the LHC or ITER
