So she's either playing a game or not. Don't ask for a different day, just say "Cool. Lemme know when." and then, if you're available on the day she suggests, tell her. If not, tell her that.

Don't turn this in to a thing. It is very low stakes.

‘Some time next week’ is reasonably committal. Suggest a day that suits you and if she can’t make it then leave the ball in her court. She’ll arrange a day if she’s actually keen.
