My crush from work sometimes acts in ways which suggest he likes me but other times he acts uninterested around me, so I'm struggling to read him.

Maybe he likes some traits of yours or you as a person or as a friend. If you think otherwise, then it's better to ask him as it'll give you a better idea of what's actually going on.
