House Mate leaves and wont pay rent!

If it's a Joint and Several Tenancy Agreement then you and your guarantors can be pursued for the whole rent for the house, regardless of the fact that she has left. This includes her guarantor. Check exactly what you have signed.
That said, there may also be a clause in the agreement which obliges her to find a replacement tenant and the landlord / letting agent should pursue her on this basis. If a replacement tenant is found make sure you sign a new tenancy agreement with the new tenant added. You should also have a chat with someone at your Uni accommodation office. They'll be able to provide some advice.
