why does crooks call slim mr slim, if they have a good friendly relationship

Everybody respects Slim, he is the perfect man on the ranch and "his authority was so great it was taken on any subject, be it politics or love."

You could say in contrast to other characters who treat Crooks with contempt and indifference (the Boss, Curley's Wife etc), Slim treats him with civility
