The 'best' GCSEs are ones which you're interested in, and will do well in. Also, they need to give you a good, broad educational base on which you can build as you specialise at A level and beyond. Thus, maths and English are essential, and most people also have combined or triple science, a humanities subject such as history or geography, a social science like economics, law, sociology etc and many have a MFL. That's seven or eight already, giving you a good mix of arts and sciences. The rest of your options should be ones which you enjoy and are good at - not picked from some arbitrary TSR-esque 'prestige' list which means precisely nothing.
It depends on your school and how they do it. Here are a some tips: Econ and business aren't bad though econ is better. Both subjects are mostly the same for year 12.
Think of some career paths that mix together and that have subjects you enjoy.

The best GCSEs are those which will enable you to study the A-levels or other qualifications required for your chosen career. Key is grades attained, your motivation, work ethic, and your personality.
