Anything else can I do if I realise that I have made a mistake in replying my offer after deadline?

Is it okay for me to switch my firm and insurance choice within 14 days after firming my offer?

For example, if I would like to firm uni A but I firm uni B before deadline. Can I change my choice after deadline but within 14 days after replying my offer?

You can change 14 days after submitting so long as it’s not after the deadline. If it is after the deadline, I’d suggest contacting whatever university you wanted to go to and inform them that you’d like to switch and see what they’d say… otherwise wait till results day and pray you didn’t meet the conditions for your firm. You could also try contacting UCAS but deadlines are usually final.
